We love summer! We love a barbecue! There is no more delicious addition to your BBQ repertoire than barbecued asparagus - marinated with olive oil, lemon and salt to let the flavour stand out.


800g asparagus

Olive oil

Juice of 1 lemon, plus lemon wedges to serve

A generous helping of Maldon Sea salt


Rinse the asparagus and trim the ends. Place the asparagus in a shallow dish.

Mix the olive oil and lemon juice in equal parts and pour over the asparagus, turning the spears to make sure each one is coated with the mixture. Add a sprinkle of salt and leave them to marinate until you are ready to put them on the BBQ. Keep the dish with it's leftover marinade handy to pop the cooked spears back into.

Cooking time depends on the thickness of your asparagus spears, with smaller spears only needing a couple of minutes a side at most. When they are ready, pop them back into the dish with the remains of the lemon oil marinade, sprinkle with the sea salt and serve with lemon wedges.


Try threading the asparagus spears onto a wooden skewer to keep them all together. You will need to make sure you soak the skewer in water first! Choose asparagus spears of even thicknesses for the best results.
